Haewai Meadery
If you’d like to try mead as a healthy alternative to wine, you have come to the right place.

Our mead is made the old-fashioned way, crafted in an unhurried manner and allowed to mature before we bottle it for sale. We don’t try to speed up the process by heating and chilling or adding enhancers as we believe that those procedures diminish the quality of the product.

Spring Water - The Meadery spring never runs dry. The water has natural salt and minerals which allow us to complete fermentations without additives which would be needed otherwise to ‘feed’ the yeast. The spring bubbles out in the meadery gardens where you hear the running water, and the sounds of the native bird, the Tui.

Herbs - The combination of elderflowers and peppermint has long been used with mead to enhance their collective medicinal qualities .Mead with herbal infusions is traditionally called Metheglyn which has the reputation as being one of the first forms of medicine. Meddyglyn and Metheglyn are both Welsh words meaning healing liquor. For about three months these herbs have been seeped in the mead while it has been aging. The taste of the herbs together, or the elderflower on its own, can be identified in the flavours.

Jacob De Ruiter is a landscape architect and author of three books on garden design. He and his partner Coral share a lifestyle centred on their garden and mead making, which has evolved from bee keeping and a love of flowers.

Tours of Haewai Meadery and Wind Gardens are available by arrangement:  info@haewai.co.nz

Haewai Honey Mead is brewed and bottled in one of Wellington's original Victorian farm cottages nestled in their garden barely fifty metres from Wellington's South Coast.

Frequently blasted by north and salt-laden south winds the ‘Wind Garden’ has microclimates designed to enable a wide variety of decorative plant species to flower for nine months of the year.

HONEY MEAD is an alcoholic drink once used as a HONEYMOON aphrodisiac for fertility. It is a nutritious beverage that can be enjoyed before and with dinner or after a hard day's work. The nectar collected by honeybees from indigenous New Zealand flowers such as tawari, pohutukawa, and kamahi is mixed with water from a unique natural spring at the meadery, and fermented. Each mead has its own distinct aroma and flavor inherited from the particular honey used. Free mead tasting and bottle sales are available every afternoon.
